



To use finger limes, slice them open & gently squeeze out the caviar like pulp to add bursts of tangy citrus for both savory & sweet dishes, like in seafood, salads, avocado toast, desserts, cocktails add to cheesecake & ice cream or as a garnish over your favorite sushi, oysters or any raw seafood dish.
To Prepare
- Slice & Squeeze: Cut the finger lime into segments, then gently squeeze to release the tiny pearls, similar to caviar.
- Remove Seeds: Spread the pearls on a plate and pick out any seeds with a small knife.

The Brown Finger Lime is a beautiful and rare citrus variety It is the largest variety in the country, both in overall size and in the size of its caviar-like vesicles. When fully ripe, its flesh turns a soft pink, and if left to ripen further, it develops into a dark pink or red. This variety has a milder floral note compared to other finger lime varieties. One of its standout features is its impressive shelf life; when picked at peak ripeness and left at room temperature for several days or even weeks, the pink vesicles become even denser. The fruit is almost seedless. Green finger lime is also known as the crystal finger lime, and is an uncommon variety of citrus. This variety has green skin, and a lime green - clear flesh. Green finger limes usually end up about the size of an index finger, and contain a few small seeds.
